Autumn Chef’s Table Omakase: A Gastronomic Journey

Led by Head Chef Shingo Iijima, Fat Cow’s Autumn Chef’s Table Omakase experience is inspired by the traditional washoku and kaiseki styles, focusing on the season’s finest ingredients. The 7-course Tetsu Chef’s Table Omakase ($198++/pax) dinner menu and the 8-course Shin Chef’s Table Omakase ($138++/pax) lunch menu are carefully curated to bring out the natural umami and rich flavours of each ingredient, from succulent Wagyu beef to fresh seafood delicacies.

Highlights of the Tetsu Chef’s Table Omakase

The dining experience begins with a delightful Fukiyose Mori, an assortment of Japanese appetisers, including matcha-coated fig tempura, pacific saury simmered with salted plums, and deep-fried Ginkgo Leaf Sweet Potatoes. A standout dish is the Shabu Style Toriyama Umami Wagyu, a tender Wagyu sirloin butt simmered in a flavourful bonito broth, accompanied by charcoal-grilled eggplant and Japanese ginger.

The richness continues with the Teriyaki-style Toriyama Umami Wagyu, grilled beef brisket slices in house-made teriyaki sauce, served with sautéed spinach in Wagyu beef fat. For dessert, diners are treated to a refreshing Citrus-flavoured Sweet Potato Crème Brûlée and house-made soy sauce ice cream, offering a unique, sweet finale.

Limited-Time Toriyama Umami Wagyu Omakase

From 15 September to 15 October 2024, Fat Cow is offering a limited-edition Toriyama Umami Wagyu Omakase menu ($250++/pax), celebrating the highly prized Wagyu beef from Japan’s esteemed Toriyama Farm. Known for its refined fat and subtle umami, Toriyama Umami Wagyu is the result of meticulous feeding practices and advanced techniques that enhance the beef’s flavour. The 8-course meal includes dishes such as Sous Vide Wagyu Carpaccio with Kaluga caviar, Sukiyaki-style Wagyu Knuckle grilled over binchotan, and Shabu-style Ribeye simmered in bonito broth.

Wine Pairing Event with ST. Supéry Napa Valley

In addition to the omakase menus, Fat Cow is hosting a special wine pairing dinner on 26 September 2024, featuring the Toriyama Umami Wagyu Omakase with a complimentary pairing of wines from ST. Supéry Napa Valley. Diners will have the opportunity to enjoy a 4-wine pairing (add-on $118++/pax) that complements the rich, umami flavours of the Wagyu beef. The event will be hosted by Emma Swain, CEO of ST. Supéry Napa Valley, who will share insights into their sustainable vineyard practices and their exquisite wines.
