Heritage Hawker Stories Buffet At The Fullerton Hotel Singapore

Singapore is renowned for its vibrant hawker culture, a melting pot of flavours and aromas that tells the story of our multicultural heritage. The Fullerton Hotel Singapore’s Heritage Hawker Stories Buffet at Town Restaurant is a testament to this rich culinary tradition. This evening, I had the pleasure of sharing this gastronomic experience with my mother, and it was nothing short of spectacular.

Heritage Hawker Stories Buffet – Guest Hawkers

One of the most commendable aspects of the Heritage Hawker Stories Dinner Buffet was the inclusion of guest hawkers whose stalls are undergoing renovations. This initiative not only supports our local hawker culture but also offers diners a chance to enjoy these beloved dishes in a new setting.

To-Ricos Kway Chap

A particular highlight was the Michelin Bib Gourmand awardee, To-Ricos Kway Chap from Old Airport Road Food Centre. The kway chap was a comforting bowl of silky-smooth flat rice noodles served with a savoury broth and an assortment of braised pork and offal. Each element was cooked to perfection, offering a taste that was both familiar and heartwarming.

Warong Serembat Satay

Another crowd-pleaser was the Warong Serembat Satay. Freshly charcoal-grilled at the alfresco terrace, the satay was served with crunchy cucumber and onion, ketupat rice, and a signature peanut dipping sauce. The chicken and beef skewers were juicy and flavourful, capturing the essence of traditional satay that we all love.

Heritage Hawker Stories Buffet – Ambience and Setting

The Fullerton Hotel, with its stately grandeur, provides the perfect backdrop for this culinary journey. As we walked into Town Restaurant, the atmosphere was elegant and refined, with a touch of nostalgia that brought back memories of the iconic hawker scene along the Singapore River. The alfresco terrace, with its view of the river, added a serene and picturesque element to our dining experience, far from the hustle and bustle of a typical hawker centre.

Heritage Hawker Stories Buffet – The Culinary Highlights

The buffet line-up was a feast for the senses, showcasing a diverse array of local and regional favourites. Each dish was meticulously prepared, bringing out the authentic flavours that Singaporeans hold dear.

We began our meal with their impressive selection of fresh seafood. The array of prawns, oysters, and other seafood delicacies was the perfect way to kickstart our evening. The freshness and quality were evident in every bite, setting a high standard for the rest of our dining experience.

Town’s Signature Laksa with Boston Lobster

Our culinary journey continued with Town’s Signature Laksa. This dish was elevated with the addition of Boston lobster, adding a touch of luxury to the traditional laksa. The rich, coconut-based broth was perfectly balanced, with just the right amount of spice. The lobster was succulent, its sweetness complementing the aromatic laksa broth beautifully. This dish set the tone for the evening, promising more delightful surprises.

Wok-fried Kam Heong Mud Crab

Seafood lovers would rejoice at the sight of the Wok-fried Kam Heong Mud Crab. The crabs were cooked to perfection, their natural sweetness enhanced by the Kam Heong sauce, which is a fragrant blend of curry leaves, dried shrimps, and spices. Each bite was a burst of flavour, making it one of the standout dishes of the evening.

Ayam Buah Keluak and Tuna Tataki Poke

Though we didn’t try these, the Ayam Buah Keluak and Tuna Tataki Poke are notable mentions. The former is a classic Peranakan dish, rich and earthy, while the latter offers a fresh, modern twist on traditional Japanese flavours.

Desserts: A Sweet Conclusion

Ending our meal on a high note, the dessert selection was a true delight. The Nyonya Durian Chendol was a standout, combining creamy durian puree with fragrant pandan jelly and sweet coconut milk. The quality of the durian was exceptional, adding a rich, aromatic depth to the dessert. It was an indulgent yet refreshing treat that captured the essence of traditional Southeast Asian sweets.

Another local favourite, the Bobo Cha Cha, was equally delightful. This dessert featured a comforting combination of sweet potatoes, yam, and tapioca pearls in a rich coconut milk base. It was a perfect blend of textures and flavours, providing a satisfying end to our meal.

The Kopi Goat Milk ‘Tiramisu’ was another highlight. This innovative fusion of local coffee and creamy goat milk created a dessert that was rich yet not overwhelming. It was a creative take on the classic tiramisu, leaving us craving for more.
