Potato Head Singapore Teams Pâtissier Will Goldfarb & Mixologist Kamil Foltán

>Potato Head Singapore is delighted to bring world-renowned Pâtissier Will Goldfarb’s inventive desserts to Singapore and presents a takeover of Will’s flagship restaurant Room4Dessert, Bali, at Studio 1939 here in Singapore. Goldfarb will work closely with Kamil Foltán, PTT Family’s creative Head Mixologist, to present a five-course showcase of desserts and cocktails using Balinese and regional ingredients. The takeover will be held from 10 March to 19 March 2017, with two seatings every night at 7pm and 9pm respectively.

Will is known for his ability to blend cutting-edge gastronomy with classic techniques and flavours to create thought-provoking and exciting dishes.Before starting the much-lauded Room4Dessert in Ubud, Bali, Will has an international reputation for his mastery and innovation with stints in the famed kitchens of El Bulli, Gerald Mulot, Cibreo and Tetsuya. Combined, the powerful duo will bring a truly unique gastronomic experience to the Singapore dining scene for a limited time only. 

Each dessert’s composition reflects the environment they are created in — coconut, palm sugar, coconut nectar, chocolate, mushroom, medicinal herbs, cocoa butter, coffee, rice and fruits — but it is their interpretation — with the use of frozen meringue, spuma, foam, aspic, jamu, fresh bread — that turns them into a culinary masterpiece.

The desserts will be served with Kamil’s cult cocktails that will either complement or contrast the flavour profile and texture of Will’s desserts. The pairing of five beverages — alcoholic and non-alcoholic — are not only influenced by each of the desserts but focus on South-east Asian indigenous flavours.
