Executive Sous-Chef Alvin Leong has selected eight exquisite well-received creations and will let fans vote for their desired four signature dishes to be featured in the November buffet spread at Crowne Plaza Changi Airport’s Azur! This dining promotion is available for a limited period only from 2 – 11 November 2012.
The epic showdown will see the eight “heavy-weight” favourites in a four versus four voting contest on Crowne Plaze Facebook Fan Page. Fans can
“like” the photo of their favourite team of signatures from 15 – 28 October 2012. The winning team of four signatures will be included in the buffet line during the Azur Signatures Dinner Buffet!
Team A: Sinfully Rich
With the theme of Sinfully Rich, Chef Alvin has pulled together, four sexy marvellous dishes: Sea Salt Roasted Crispy Pork Belly with Peri Peri Sauce, Summer Berries Sea Prawn with Minty Plum Sauce, Singapore Style Sri-Lanka Chilli Crab and Durian Mousse Cake.
Sea Salt Roasted Crispy Pork Belly with Peri Peri Sauce
Crispy cracking atop a succulent juicy layer of fat and sea salt roasted pork is enough to get mouths watering. But Chef Alvin makes the local Crispy Pork Belly even more memorable with a fiery Peri Peri Sauce which greatly enhances with a blast of spice.
Summer Berries Sea Prawn with Minty Plum Sauce
This berrilicious recipe of crunchy golden sea prawns fried in tasty batter and tossed in an unforgettable sweet and sour minty plum sauce was featured on an episode of “Living the Golden Age” and praised by both hosts, Chew Chor Meng and Xiang Yun for the creative and unusual use of mixed berries.
Singapore Style Sri-Lanka Chilli Crab
Interpretation of the quintessential local delicacy has long been a favourite with diners and enjoyed by both locals and foreigners. The plump sweet chunks of crab flesh are complemented with a fiery explosion of sweet and savoury flavours from the thick chilli sauce concoction.
Durian Mousse Cake
Gloriously smooth durian mousse is layered between soft sponge cake and is covered with lip smacking cream, dusted with chopped peanuts and topped with a wonderful durian puff pastry once again chock full of flavourful durian mousse.
Team B: Absolutely Scrumptious
Lighter on the palate but equally as tantalising on the taste buds are the four contenders in Team B, Absolutely Scrumptious: Char-smoked Duck Supreme with Chocolate Balsamic, Pickle Chilli Steamed Seabass, Black Pepper Sri-Lanka Crab and Mango Passion Cake.

Tender fatty slices of char-smoked duck is oozing with full-bodied flavour and lightly drizzled with a hint of exceptional chocolate balsamic for an taste of sweet and sour – a unique creation by Chef Alvin for those with a refined palate.
Pickle Chilli Steamed Seabass
The healthy and nutritious Pickle Chilli Steamed Seabass made its first appearance on the buffet line during Chinese New Year as an oriental festive dish. Steamed seabass slices are served with premium soya sauce, sourish pickles and chilli slices.
Black Pepper Sri-Lanka Crab
The equally famous cousin of the Singapore Style Sri-Lanka Chilli Crab is the Black Pepper Sri-Lanka Crab. The tasty potent peppery black sauce is a winner when paired with the sweetness of the crab flesh. Shiok ah!
Mango Passion Cake
