Singaporeans are crazy about local food, so much so that it is a MUST HAVE in every hotel buffet. The Orchard Cafe Singapore, an icon of Orchard Hotel Singapore for three decades commands a loyal following of fans who always return for their favourite local fare. As part of Orchard Hotel Singapore’s enhancement programme, The Orchard Cafe will be reopening after its refurbishment on 19 Nov 2018. Of course, the buffet spread has been given an upgrade too and you can be sure to expect lots of tasty creations by Executive Chef Bryce Li and his capable team.
In fact, while The Orchard Cafe Singapore was undergoing refurbishment, Chef Bryce took the chance to try the local fare all over Singapore’s hawker centres. I was honoured to be able to join him on his visit to Newton Food Centre to check out two local favourite dishes which is the BBQ Chicken wings and the BBQ Sambal Stingray for inspiration on what to create at The Orchard Café.

During the food hunt, Chef Bryce shared with us what he likes about the dishes from the different stalls he had tried and he shared that he was going to use all this inspiration for his upcoming dishes at The Orchard Cafe. I’m sure you can’t wait to try Chef Bryce’s enhanced version of the BBQ Grilled dishes and tasty, spicy sambals too!

- Heritage-Inspired Local Creations – Grilled Barramundi in Kampong Sauce, Lobster Roti John, Wok-Fried Slipper Lobster in Salted Egg Yolk, Tau Kwa Pau with Tea-Smoked Duck, Chendol with Gula Melaka Ice.
- Chef-curated cuisines from around the world such as Roast Beef and Lamb, House-smoked Salmon, Crispy-Skin Roasted Pork Knuckle.
