Available from 2nd to 14th May, Yue Bai’s Mother’s Day Menus are priced at $158++ per pax for a minimum of two diners, and at $138++ or $228++ per pax for a minimum of four diners. The menus feature refreshing starters, nourishing double-boiled soups, fresh seafood, roasted delights and sweet desserts, among many others. These dishes are a preview of the restaurant’s Summer menu, which spotlights meals that support heart health in the strenuous heat.
At the helm of these curated feasts is Singaporean co-owner and chef Lee Hongwei, who prepares each nutritional course with the sincerity, dedication and care that mothers deserve. The menus are a contemporary expression of Dietary Therapy (食疗), boasting qualities that will keep mother’s skin, hair and nails aglow.
There’s also the restaurant’s signature Braised Hokkien Hu Tou Vermicelli. Its recipe was inspired by Chef Hongwei’s grandmother, who typically prepared the noodles Heng Hwa style: Hutou rice vermicelli is braised in a stock of pork bones, then fried with fresh seafood. At Yue Bai, Chef Hongwei braises the same type of noodles in a superior chicken stock, alongside abalone, sea cucumber, Chinese mushrooms, Chinese chives and beansprouts.
The lavish feasts also comprise a Double-boiled Silkie Chicken Soup, Jasmine Flower, Abalone, Dried Longan; Crispy Roast Suckling Pig; Australian Lobster with Asparagus and Jasmine Flower; Steamed Fillet of Cod, Superior Broth, Red Dates Puree, Baby Sharp Spinach; and more.
